When I started feuille food lab, it was purely out of passion to cook, to share, and to bring about the different possibilities of the food we eat out of our daily lives. Somewhere along the way, I was quite privileged to have met some new friends with the same interests—whether it was directly related to the cuisine or some others that were necessary to help provide a great dining atmosphere. In anticipation of each upcoming service, I always have my hands full with the potential menus. There are simply so many things I wish my diners to try; whether it’s a new ingredient or a common readily available item that is tested and treated with a different method. Either way, my objective is to turn the diner’s mind up-side-down, expose them to new ideas, open a new possibility both for them and for myself. I have to know if a particular idea worked the way it was meant to or that it backfired and why it didn’t work the way it did. Learning through diners is the best gift they can give me in continuously refining myself and my cuisine.
We had just finished our service in April. Regrettably, we were not able to accommodate all the potential diners who expressed their interest in reserving a table at feuille. However, I wish to thank all the potential diners out there in continuously supporting feuille, giving us an opportunity to perform for you, bringing picnic to your dinner table. Our next service is scheduled for July. Perhaps, this time, we will be able to accommodate a larger party. Thank you all again for your interest.
