OBSERVATION
- Crude– to present the ingredient in its most original form—rawness—without additional cooking or manipulation
- Imitation– the opposite of crude, employ as many complex techniques and ingredients as possible to imitate an ingredient in its most original form
- Rare—search and utilization of rare ingredients and present them as the main component of a dish whilst with others as garnish for flavor profile or
- Common—prepare commonly known ingredients in the unorthodox method to change their flavor profiles , compositions, colors, and textures
- Scene—various ingredients, main or garnishes that make up the whole dish will need to be presented as part of a natural scene, for example, a path into the forest, or a sandy beach
- Habitat—ingredients utilized, with their vegetable or starch components must also be drawn from that very habitat to which the ingredient was grown in or design a dish in which the main ingredient presented will feature the original habitat that it was in
- Senses—the design of the dish must appeal to our various senses, a multisensory experience that engages in sight, smell, taste, touch, and sound
- Textures—dish will feature a particular texture that is either soft, malleable, melting, crisp, crunchy, or a combination of two or more textures
- Playfulness—the design of the dish must appear humorous that draws its inspiration from day-to-day life occurrences or the dish has to be able to interact with the diners at some level to make the diners feel playful and interactive
