寫給或許能在餐會中相遇的您

致我們最親愛的朋友:

期待我們很快就能於餐會中見到面!
離我們最近一次碰面已有兩年多。當我回憶起那一刻的時候,您的出現使我們增光添彩,感謝您的大方信任,讓我們團隊有機會在您面前主持烹飪您的晚宴。
對於Feuille Food Lab 的旅程來說,這的確是一次非同尋常的經歷,也更加值得回味。
在過去的兩年里,我不斷地深入研究和探索如何將美食更進化發展,以增進親身體驗甚至加強一段回憶的感受,或是探索食物無止境的創造可能性。並如何將這些探索,詮釋成一段能讓您與您的貴客,沈浸於趣味性用餐體驗與感官互動模式的用餐樂趣。
如果說 2018年 的晚餐,是從城市邊緣到森林的觀看之旅,那麼 2020年 的晚餐,則可更貼切地描述爲:重新發掘我們在那段短暫旅程所錯過的拾遺。因為我們漫不經心所錯過的,很可能是當天最精彩、值得回憶的片段——也許,它們是略微隱藏在我們走過路邊左側的野蘑菇、自然風乾卻仍附着在樹枝上的野蔓越莓、或是我們對前方的目的地沒有這麼急迫、堅速的步伐,途中偶然相遇的野生動物。
《靜、觀・Observance》爲今年餐點活動的主旋律,重新讓我們有機會重溫那些可能發生的時刻。 也許只有通過那夢幻般的半醒時刻——當我們難以區分現實和夢境時——當我們努力似地揉揉眼,要喚醒那似乎還瞇著眼的朦朧視線,如此當下才得以專注於眼前可觀察到的細節。

就在那《靜、觀・Observance》的章節裏,我們發現自己真正清醒過來,凝視面對着森林裏獨有的場景那裡開始!
隨着《靜、觀。Observance》這活動在時間流逝下,逐漸地在預定的日期裡揭開面紗,同時間也是新冠病毒在全球大流行蔓延的時刻,從此永遠改變了我們的生活方式和未來。很有可能,儘管《靜、觀。Observance》原訂在九月份啟動,而我不得不改變我心裡的堅持——《靜、觀。Observance》活動可能稍微推遲。
我感謝您在這段時間裏,不斷給予支持和打氣,無論您過去是否曾經讓我們主持您的晚宴,並決定今年願意再給我們一次機會為您呈現。抑或是願意成為、跟隨我們在 Facebook 上,與您每週分享訊息點滴的親愛讀者。然而,在此時,寫這封信的當下,我們仍然不間斷地進行必要的準備工作,以確保我們的承諾,如果除此之外沒有其他特別對您宣佈的決定。

烹調畢竟是人與人之間的聯繫,這無疑是我們 Feuille Food Lab 存在的基礎。要分享這份感情,更讓所有人感受那種,幾乎等同於哥倫布發現新世界的激昂、感性,我們更必須盡一份力量,通過保護您和我們的工作人員來確保這種聯繫的持續。如同我們面前的衆多機構一樣,如果我們之後能如期相見,將會採取以下措施來保護您的安全:
1.進入我們的場所後,請保持配戴口罩,直至我們為您測量體溫爲止。
2.除了提供酒精消毒您的雙手外,請允許我們讓您選擇您喜歡的香皂,並協助您在用餐前洗淨您的雙手。
3.我們希望您配合告知,在您到來之前,當下並無受到任何預防性 14天的隔離檢疫。
4.我們只會在不同的指定預約時間中,一次接待最多4位賓客,以儘量減低潛在的暴露風險。
5.我們會依循「食物安全重點控制控管・HACCP」標準,每日對所有可能接觸的表面,進行徹底的清潔及消毒程序。
而我們亦會每天早上爲員工,採取相同的溫度測量標準以及相對的防疫措施。

我會盡最大努力,不定時更新關於我們的開幕資訊,分享更多有關《靜、觀・Observance》的相關訊息。 最後,也請您保重安全,保護自己及您的家人。我期待很快能在不遠的將來,重新推開 Feuille Food Lab 的大門迎接您,再次與您相見!

A Letter to Our Dearest Friends

May we meet yet again!

It has been more than two years since we have chanced our very meetings. As I recalled the very moment how you have graced us with your presence and allowed us an opportunity to host your dinner and perform before you. It had been nothing short of extraordinary for Feuille Food Lab’s journeys indeed. During these past two years, I have continuously delved and explored further on how cuisines can be evolved to enhance a particular experience or memory or be explored for its borderless creations of possibilities or be simply translated to an evening of engagement and fun factors for you and your esteemed guests.

If the dinner for 2018 had been a journey from the edge of the city to the forests, then the dinner for 2020 can be aptly described as a requiem to rediscover that which we may have missed during that transient journey. What we had negligently missed, could very well be the highlights of the day—perhaps they were the wild mushrooms just slightly hidden to the left of the path that we took, naturally wind-dried cranberries in the wild still attached to its branches, or the opportunistic meetings of wildlife that crossed our paths, had we been in the waiting and not so eager and determined for our final destination. “Observance,” as the main theme of this year’s event, suggested and allowed us an opportunity to recapture those moments. Perhaps it was only through that dreamlike semi-awake moments—when we had trouble telling apart the reality from the dream—do we really squint and rub our eyes hard enough to fight off the blurs and focus on the observable details. And in that very chapter, in the context of Observance, we find ourselves immediately awoken only to confront the particular scenes in the forest to begin!

As the Observance gradually unfolds itself in the upcoming months towards the scheduled month, so too is the current event of world pandemic of Covid-19, which has now forever changed our lives and onward. It is a very likely possibility that despite Observance has been scheduled for September, I would have to alter my affection towards the more realistic venture—that Observance may be postponed. I want to thank the many of you for your continuous support and understanding during this time—whether that you have allowed us to host your dinner in the past and you would like to give us another chance this year or be the endearing readers to those weekly letters I have shared with you on our Facebook page. However, at the moment, at the time of writing, we continuously carry out the preparations necessary to ensure our promised rebirth if no alternatives have been decided and announced otherwise.

Cooking, after all, is about connecting people, which, undoubtedly is the foundation of our existence. And to share that passion and for everyone to partake in that excitement of flavors almost equivalent to that of Columbus discovering the new world, we must also do our part to ensure that continuance by protecting you and our staff members. Like so many establishments before us, we will adopt the following measures to look after your well-being, should we ever meet again in the future:

a) Upon entering the premise, we kindly ask you to wear and keep your facial masks on until we have taken a measurement of your body temperature
b) In addition to sanitizing your hands with the alcohol provided, we will further ask you to choose the scented soap to your liking and let us assist you in the washing of your hands before the meal begins
c) We would also like your assistance on declaring that you are not under any precautionary quarantine at the time of your joining with us
d) We will minimize the potential exposures by receiving only four guests at any given time of our reservation block.
e) We will conduct a thorough cleaning and disinfecting procedures daily on all the potential contact surfaces according to the HACCP standards
We will also carry out the same standards for our employees each morning as they join and assist us in the daily preparation of your meals.

I will do my best to continuously provide the updates as necessary and at times, share and reveal more information on the Observance event. At last, but not the least, please stay safe, protect yourself and your family and let the best of us prevail. And I look forward to the day of meeting you again in the not-so-distant future as we reopen our doors to welcome you!
